Chicken Fajitas

SOOO Easy and YUMMY!
One pot meal.
Slice onion, yellow, green, and red peppers.
Cut chicken into strips.
Put Extra Virgin Olive Oil in pan. Cook on medium. Add veggies. Cook until veggies are soft. Add chicken. Cook until chicken in cooked all of the way through. Add -- and here is my secret ingredient--- frozen orange juice-about 1 cup. Let cook down. The juice will cook down and become a sauce for the fajitas. Serve in warmed tortilla shells. Add a dollop of sour cream.

2 - chicken breasts
1 small chopped onion
1 can of Rotel (mild or medium)
3 TB garlic
1 TB cumin
3 cups long cooking rice
salt and pepper

shredded cheddar cheese
sour cream

First add chicken broth to large pot.
Add chicken breast. Add a small amount of water to cover chicken to boil.
Once chicken is cooked through, take out and chop into cubes.

Return chicken to pot. Add remaining ingredients (except for cheese and sour cream).
Continue to cook on med high and cover.
Let cook until rice is absorbed (approximately 20 minutes).
Season to taste with more cumin, garlic, salt and pepper.
Top with cheese and sour cream.

Pirate Party

Ahoy Maties! AArrrrrrgh, round up yer maties for a swashbuckling good time, at a Pirate Party!

Used a treasure chest pinata filled with candy and faux jewels from the dollar store...
Found brass candlesticks, seashells, and other antique treasures to decorate with.
Used fish net for decor as well.
Handed out foam shields and swords and plastic telescopes and pirate ships for party favors...
Served chicken legs from the bucket and ale (ginger-that is :)) ...
