Chicken Mexican Rice

OK, here is my most requested recipe:

You will need:

1 - 32oz. carton of Chicken Broth
2 - chicken breasts
1 small chopped onion
1 can of Rotel (mild or medium)
3 TB garlic
1 TB cumin
3 cups long cooking rice
salt and pepper

shredded cheddar cheese
sour cream

First add chicken broth to large pot.
Add chicken breast. Add a small amount of water to cover chicken to boil.
Once chicken is cooked through, take out and chop into cubes.

Return chicken to pot. Add remaining ingredients (except for cheese and sour cream).
Continue to cook on med high and cover.
Let cook until rice is absorbed (approximately 20 minutes).
Season to taste with more cumin, garlic, salt and pepper.
Top with cheese and sour cream.

Pirate Party

Ahoy Maties! AArrrrrrgh, round up yer maties for a swashbuckling good time, at a Pirate Party!

Used a treasure chest pinata filled with candy and faux jewels from the dollar store...
Found brass candlesticks, seashells, and other antique treasures to decorate with.
Used fish net for decor as well.
Handed out foam shields and swords and plastic telescopes and pirate ships for party favors...
Served chicken legs from the bucket and ale (ginger-that is :)) ...

Breakfast of Champions

I had bought a Krups coffee/espresso maker a couple of years ago... We made coffee in it several times, however, we hadn't attempted to use the espresso function. Well, last night my friends came over and we figured it out and it turned out sooooo yummy! So, this morning I tried it out on my own and again... yummy! This may be a ritual. This probably isn't a good thing. BUT, it does save me a lot of money spent at Starbucks, and I don't have to leave the house. :)

homemade playdough

Make homemade playdough:
You will need:
1 cup of salt
1 cup of flour
1 cup of water
rolling pin
cookie cutters
Put salt and flour in a deep unbreakable bowl. Dress your child in an old t-shirt to protect his/her clothing. Have your child mix the dry ingredients thoroughly with hands or a wooden spoon. Slowly add water to which some drops of food coloring have been added. Continue to mix, then knead dough until it is smooth and elastic without being sticky. Dump the playdough onto a flat floured surface and roll it out with the rolling pin. Use cookie cutters to make shapes. You can also use store-bought playdough and all of the many accessories that they offer to go with it.
